Zesty Summer salad with lemon dressing.
At Christmas we had a zesty delicious Summer salad that my sister in law made. She served it with grilled flatbread with a side of prawns and fish. It was so good I had to make it myself to share with you!
Ingredients
Serves 4
1/2 cup olive oil
1/4 cup lemon juice
3 garlic cloves, crushed
4-6 tomatoes of various sizes, sliced into rounds
2-4 smallish Lebanese cucumbers, chopped (or finely mandolined if you're feeling fancy) 1 red capsicum (pepper) sliced
1/2 red onion, finely sliced
1/8 teaspoon ground sumac
1 tablespoon finely chopped parsley
1 tablespoon Finely chopped mint
lemon wedges to serve (optional)
Method
Combine the olive oil, lemon juice and garlic in a bowl, to make dressing. Season with salt and pepper. Combine as much (or little) of the tomato and cucumber on the platter along with the capsicum and onion. Sprinkle the sumac, and drizzle with 1/4 cup dressing and let everything get friendly. Serve with fried or lightly grilled flatbread and a BBQ!
