Homemade Lamb Pizza

We like to have a Roast once a week. It’s been a tradition in my family for generations. We enjoy a leisurely family Sunday Roast followed by a walk. We always cook a large lamb so we have leftovers for the following day and THIS is our favourite left over Roast lamb pizza! In fact, you can make it with any left over meat Roasts! Hope you like it!


Ingredients

  • Pizza base, our favourite is pre made gluten freedom pizza base.

  • BBQ Sauce

    Toppings

  • Nutritional Yeast flakes, this is our substitute for cheese! But feel free to use whatever you prefer.

  • 1/2 cup sliced mushrooms

  • 1 cup chopped red tomatoes

  • 1 cup Chopped cauliflower

  • 1/2 a sweet potato cut into 2cm cubes

  • 1 zucchini sliced into 3cm

  • 1 cup chopped spinach

  • 1 spring onion* optional

    This makes two medium pizzas!

Method

Heat the oven to 180 f

On a baking tray and sheet, Coat the pizza base with bbq sauce then sprinkle nutritional yeast flakes.

Add the toppings, cut cooked lamb, (the trick to the perfect lamb pizza is to make sure the roast is a little on the bone, making it perfect to get heated up again without it being chewy!) Mushrooms, tomatoes, sweet potato and zucchini. Cook for 20 minutes.

Before serving, finely chop the spring onion and spinach leaves and sprinkle on top. Salt and pepper to taste!
