Mango salad with Avo smash


I have been wanting to make this salad since we returned home from Indonesia. This salad is irresistibly refreshing and a versatile side dish for any plate: ideal with fish, veggie mains or even tacos.

Ingredients:

  • One Mango

  • Red bell pepper

  • English cucumber

  • Fresh cilantro

  • 3 tablespoons lime juice (1 large or 2 small)

  • 1 tablespoon olive oil

  • ½ tablespoon honey

  • Salt and pepper

  • 1 cup spinach

  • 1 cup iceberg lettuce

  • 2 avocados

  • Corn chips

  • Handful of pumpkin seeds and sunflower seeds

  • Lemon

  • Soy sauce

Cutting the mango.

  1. Cut around the pit: Stand the mango on its side, with the stem facing away from you. Using a large chef’s knife, cut around the pit on one side. Start about 1/4″ from the centre, following the curve of the pit. Repeat the same cut on the other side of the pit.

  2. Use a pairing knife to score it into squares: Use a paring knife to score the mango into squares, taking care not to cut through the peel.

  3. Scoop it out with a spoon: Use a large spoon to scoop between the fruit and the peel to remove the diced mango.

Method

Chop the mango. Chop the English cucumber. ( I like to peel too!) Slice the bell pepper. Chop the cilantro. Chop the spinach and iceberg lettuce. Place them all in a medium bowl.

  1. In a small bowl, mix the lime juice, olive oil, and honey. Add to the bowl with the mango and vegetables, then add the kosher salt and mix to combine.

Avocado Smash

Cut one avocado, scoop out the flesh into a small bowl and mash with a fork. Squeeze half a lemon and add salt and pepper. Serve with corn chips!

Toasted Seeds

My mother-in-laws recipe!! BEST TOASTED SEEDS EVER!

Add the seeds to a hot pan with olive oil. Lightly toast but do not burn. Slow the heat and add a tablespoon of soy source. Keep tossing so all the seeds are covered and remove from heat. Transfer to a bowl till cool. Sprinkle over the top of the salad.
