Smoothie (Acai) Bowl

My first encounter with the infamous Acai Bowl was 11 years ago in Indonesia after I had just done a two hour Yoga class. It blew my mind! Refreshing, light, healthy and jam packed full all of nutrients! For years before the kids were born I made them… Well let’s just say they got put on the back burner. Until last month. Hello Smoothie, ice cream like, delicious snack, afternoon treat or breakfast bowl for the entire family.

Ready in just a few minutes, this Acai Bowl Recipe is filled with acai powder or puree fruit, and all your favourite toppings. You can get Acia powder easily from Health food stores like I herb. But if you do not have it, opt for more blueberries instead, since the Acai berry and blueberry belong to the same dark-colored berry family. When comparing them, you will find they are not only physically similar, but they offer relatively similar health benefits.

Ingredients

  • Unsweetened Acia Powder or puree– If you can’t find frozen acai puree, there is also acai powder available. I would recommend using this with frozen fruit for the most authentic and thick smoothie possible.

  • Frozen blueberries and strawberries – acai tastes great with just about any fruit. That said, it tastes particularly wonderful with frozen berries. Any mixture of blueberries, strawberries, or blackberries would be my top pick.

  • Banana – Ideally frozen, bananas are naturally super sweet and super creamy (not to mention loaded with potassium!)

  • Liquid – Yes, you will need some kind of liquid to get things moving along. I added macadamia milk for the extra protein boost, but feel free to add your favourite milk.

  • Acai Bowl Toppings:

    • Granola (We love GF Keto granola)

    • Nuts (Optional)

    • Coconut flakes

    • Fresh sliced fruit

Method

Freeze your fruit.

Blueberries, strawberries, bananas. You can buy organic frozen berries or make your own.

How to make your own- Slice your banana and transfer it to a small baking sheet or plate lined with parchment paper. To the same plate, add the blueberries and strawberries (store-bought frozen fruit will work just as well). Transfer tray or plate to the freezer and allow the fruit to freeze completely. You can also get frozen packaged sliced fruit.

  1. Blend. Once frozen, add the milk to the bowl of a large, high-speed blender, or nutri bullet Add the frozen blueberries, strawberries, banana, and teaspoon of acai. With the blender on low, and mixing around as much as possible blend till smooth., only adding additional liquid when needed. (1 or 2 cups fruit, 1/2 cup liquid, add more to a smooth thick consistency. )

  2. Assemble. Divide the smoothie into two bowls and top with all your favourite toppings. Best enjoyed immediately (because it will melt). Enjoy!
