Healthy Chicken Pho Soup

This is my go to healthy, light and cosy meal, all year round for Ben and I.

Ingredients

2 green shallots

Cube of Ginger

2 large carrots

Organic Chicken bone broth

2 or 3 Organic chicken strips (or left over chicken roast)

Olive oil

Red chilli

Coriander

Lime wedges

Bean sprouts

2 Bok Choy

Water

Soy sauce

Fish sauce

Turmeric powder

*Rice Noodles Optional

Method

In a round Casserole dish, Slightly toast spring onions cut lengthways (save rest for garnish)

Cut ginger into 1 cm cubes, crushed (6 pieces or so) add to dish

Add finely chopped carrots with 4 cups water.

Pour in the Chicken bone broth (500ml) (we love making our own or buying local)

Bring to boil and then add chicken. (Either Slice or slice after) till cooked through.

Add Tbsp fish sauce and Soy sauce

Now add chopped bok choy (few mins only)

Sprinkle turmeric

Pour into bowl (this is two large servings)

Add handful of bean sprouts and coriander. Sprinkle chopped red chilli on top. Wedge of lime to serve and Season to taste!
