Simple Garden Salad
I eat A LOT of greens, and this is my current favourite garden salad that I know you will love too! It’s light, healthy, and easy to whip up in just a few mins!
Ingredients
2 cups of spinach
2 cups of rocket (arugula)
1 cup handful of red sorrel leaves
1 cup handful of lettuce
1/2 cup of chopped raw red cabbage
Half diced avocado
Small handful of chopped Kalamata olives sprinkled.
Sliced Pear
Balsamic Dressing
Combine in a mason jar
1 tbsp balsamic vinegar
2 1/2 tbsp extra virgin olive oil
1/2 tsp each salt and pepper
1/2 tsp honey *optional (or coconut sugar)
Method
Combine the lettuce, red cabbage, chopped olives and chopped avocado in a salad bowl, cut the pear into slithers of 1/2 cm thick and layer on top. Sprinkle a teaspoon of sesame seeds and trickle the dressing over the salad.
